Preparación
Caliente el Aceite de Oliva en un sartén a fuego alto.
Sazone la carne con sal y pimienta por todos lados.
Ya que el sartén este muy caliente, ponga la carne a freír primero cada lado por 1 minuto, baja el fuego y sigue cada lado con otros 2-3 minutos. Agregue el ajo y el romero. Ten en cuenta que queremos hacer unos filetes saburroso y jugoso, si at ti no te gusta la carne media hecha, solo cocina un poco más tiempo. Cada uno a su gusto.
Cuando ya esta lista la carne, agregue un poco Vinagre Balsámico por encima.
Deja que se mezcle bien con los jugos de la carne y sigue cocinado a fuego bajo otros 2-3 minutos.
Retire la carne del sartén, cortarla en filetes gruesos y resérvela tapadas en papel aluminio.
Ahora la Salsa:
Agregue el Vinagre Balsámico al líquido restante de la carne al sartén cocinándolo 1-2 minutos a fuego bajo.
Retire del fuego y agregue la mostaza Dijon mezclando bien con un batidor de globo.
Sirva los filetes bañados en la salsa.
Adecuados como acompañamiento son papas y judías verdes.
